About Anthony

Anthony’s page is under construction for another few days.  Don’t worry, his food tastes a lot better than his biography.

Here’s the rundown with Anthony.  Grew up in Valley Stream on Long Island.  Grew up in an Italian home and loved food – both cooking and eating – from an early age.  Attended culinary school where he studied classical French technique.  Built upon that technique during his two years at Chanterelle – a NY Times rated 3-star restaurant, where he worked as acclaimed Chef David Waltuk’s unpaid apprentice for two years.  Anthony traveled to Costa Rica where he embraced the flavors of Latin America, and in doing so, rounded out his knowledge and mastery of western cuisine.  He spent over seven years as Executive Chef at Mill River Inn and Tupelo Honey, which, during his tenure, achieved the two highest rankings for restaurants on Long Island.  Anthony then ventured to Southeast Asia, where he attended culinary schools, cooked with the locals, and ate a ton of delicious food in Thailand, Burma, Laos, Cambodia, Vietnam, and Japan.  He returned to the states and joined Mumon, where in 3 months with Ryan by his side, they increased cover counts and revenue 4x.  He now has shifted his focus to Long Island’s next big thing: The Vaulted Door.
