About Ryan

Here’s the brief rundown.  Grew up in Lynbrook on Long Island.  Attended the University of North Carolina at Chapel Hill and studied English, Entrepreneurship, and Chinese.  Interned at the Hatsune Restaurant Group in Beijing and Shanghai during my summer going into senior year of college.  Learned from restaurateur Alan Wong, a Californian that has opened the top-rated Japanese restaurants in all of Beijing and Shanghai.  Graduated from UNC.  Managed Danny Meyer’s Blue Smoke, NYC’s top BBQ restaurant.  Embraced above all the principle of unwavering hospitality.  Moved to Mumon, a Japanese restaurant in Long Island.  With Anthony by my side, we increased cover counts and revenue 4x in three months.  Left to pursue The Vaulted Door.  In the meantime, I’m consulting on various projects including the transition from deli to restaurant at Valencia Ravioli in Lynbrook.

Favorite Dish To Cook: Sirloin steak with rice and broccoli – pan sear the steak for 3 minutes on both sides and the into the oven it goes; lightly boil the broccoli; drizzle steak juice on rice

Favorite Dish That I’ve Eaten: Moto-Roll-Ah Roll at Hatsune; My Mom’s Chicken Parmigiana; Anthony’s Crab Cakes; Cold-Smoked Trout at Gramercy Tavern; Eggplant Parmigiana at Maialino

Favorite Restaurant: Hatsune in Beijing; Gramercy Tavern in NYC

Favorite Beer: Kroenenbourg 1664

Favorite Type of Wine: White-Riesling; Red-Barolo, Amarone, Pinot Noir

Favorite Liquor: Scotch

Biggest Fear: Losing a family member; being stabbed; not succeeding

Funniest Moment: My two friends Mongo and Richie once did a ring-and-run on a house.  I was on a bike.  The owner chased us and I was the one who got caught.  He stole my bike and made me call my Dad.  Then – not so funny.  Looking back on it – pretty damn comical!

Interests: Tar Heel basketball, Everything included in this blog, China and Japan, all types of music, cycling, track & field, NY Yankees, NY Jets and Giants, NY Knicks
